A series about nerd baking wouldn’t be the same without one of the most iconic superheroes ever created: Superman. Superman debuted in Action Comics #1 (cover-dated June 1938) and subsequently appeared in various radio serials, newspaper strips, television programs, films, and video games until this very day.
Later this year it is hoped he rises back from the dead in Justice League, but until then enjoy this still very handsome, 79 years old superhero!
Ingredients:
Sponge
1 egg
120 ml (lactose-free) milk
4 tablespoons vegetable oil
100 gr caster sugar
1 teaspoon vanilla extract
1/2 teaspoon pandan extract
200 gr plain flour
2 teaspoons baking powder
Decorate
250 gr blue fondant icing
1 handful of red skittles
1 handful of yellow skittles
2 tablespoons icing sugar
How to bake:
1. Preheat an oven to 180°C and prepare a cake tin or silicon cake mould.
2. Whisk together the egg, dairy-free milk, oil and sugar to make it light and fluffy.
3. Stir in the pandan extract to colour it green.
4. Fold in the dry ingredients: plain flour, baking powder and salt.
5. Transfer the cake mixture to a cake tin (or in our case a silicon cake mould) and bake in the oven for 30 minutes. Then allow to cool completely.
6. If you don’t have a Superman logo cake tin, now is the time to cut your cake into the desired shape.
7. Roll out your blue coloured fondant icing to about 1/2 cm thick on a flat surface, lightly dusted with icing sugar.
8. Lay over your cooled sponge, using a little jam to stop it moving if you like. Press against the cake, avoiding creases and trim the base so that it’s neat.
9. Using red and yellow skittles, create the ‘S’ logo on top of the cake. Sticking them down with a little icing sugar mixed with a dash of water to create a paste.
