TGON Bakes: Penguins Penguin Cake

Disneynature’s all-new feature film “Penguins” is a coming-of-age story about an Adélie penguin named Steve who joins millions of fellow males in the icy Antarctic spring on a quest to build a suitable nest, find a life partner and start a family. None of it comes easily for him, especially considering he’s targeted by everything from killer whales to leopard seals, who unapologetically threaten his happily ever after.

Ingredients

Cake
400gr sugar
280gr plus 2 tablespoons all-purpose flour
140gr cake flour
2 ½ teaspoons baking powder
1 ¼ teaspoons salt
162gr oil
3 egg whites
1 ½ teaspoons peppermint extract
1 teaspoon vanilla extract
600gr whole milk

Decoration
White buttercream frosting
White, black, orange fondant

How to bake

Cake
1. Preheat oven to 325ºF/160°C.
2. Grease the 6-inch sphere cake pan.
3. In a large bowl, whisk together the sugar, flours, baking powder and salt.
4. In a medium mixing bowl, mix together the oil, egg whites, extracts and whole milk until well combined.
5. Pour the wet ingredients into the dry and mix until no dry ingredients are left.
6. Pour the batter into the cake pan then tap the pan gently on the counter to remove any air bubbles.
7. Bake the cake for about 1,5 hours until a cake tester comes out clean.
8. Remove the cake from the pan and let it cool completely.
9. Level the tops of each half.

Decorating
1. Use a small knife to level the round bottom of one cake half.
2. Place this half on a cake board on a turntable and then top with white frosting.
3. Gently press the other half of the cake down onto the frosted half to make a sphere.
4. Frost the entire cake with white frosting and refrigerate the cake for about 30 minutes.
5. Place the frosted cake on an upside down plate, this will help with smoothing out the sphere with fondant.
6. Roll out the white fondant about ¼-inch/0,6cm thick then use it to cover the cake.
7. Roll out black fondant about ¼-inch/0,6cm thick and cut the body shape of the penguin
8. Drape the black fondant cutout over the cake.
9. Roll out the orange fondant about ½-inch/1,2cm thick, place plastic wrap over it then cut out a smaller football shape.
10. Using a fondant vein tool create the penguin smile on the beak.
11. Attach the beak onto the penguin using royal icing.
12. To make the feet, roll out orange fondant about ¼-inch/0,6cm thick, place plastic wrap over it and cut out a larger football shape.
13. Cut the football in half and use the small diamond cutter to cut out foot details.
14. Roll out more black fondant and cut out eyes using a circle cookie cutter and then attach on the face using royal icing.
15. Cut out flippers using the black fondant and a teardrop cookie cutter and then attach on the sides of the body using royal icing.
